We use local honey from MittBi in Hernö Old Tom Gin, produced less than 3 km from the distillery. The bees that produce our honey flies free and collects nectar from the northern forests and meadows. Mainly collecting nectar from raspberry (Rubus idaeus), blueberries (Vaccinium myrtillus), lingonberries (Vaccinium vitis-idaea and fireweed (Chamerion angustifolium). One of the most important nectars comes from sallow (Salix caprea L.), even though there is almost no nectar from sallow in the honey. The bees use sallow in early spring to build up their societies. All honey from MittBi has a low dilution with water, less than 20% and is made of 100% organic Swedish northern honey, no additives.
Natural Swedish water
Sweden is well known for superior water quality – we use the best Swedish water to be found, from our very own well. Cold groundwater seeps into our hundreds of years old natural cold source. Filtered through tonnes of sand and gravel gives us super pure and fresh cold northern water. An absolute necessity to craft our award winning gin.
