Clover Club is a true classic that really highlights everything great with a cocktail. A neat aperitif perfect for mingles.
50 ml Hernö Gin
20 ml lemon juice
20 ml raspberry syrup*
10 ml egg white
Pour Hernö Gin, lemon juice, raspberry syrup and egg white into a shaker. Shake all the ingredients without ice to get a foam. Add ice to the shaker and shake it like you mean it for about 10 seconds. Strain into a chilled cocktailglass. Garnish with raspberries or keep it simple.
*Make 1 liter simple syrup, equal parts sugar and water. Add 250 gr of Raspberries to the warm simple syrup. Let it rest for a couple of hours and strain away the raspberries. Will last in the refrigerator for about 3 months.
