There are several variations of the classic cocktail Clover Club, a shaken cocktail created with gin, lemon juice, raspberry syrup and egg white. Our interpretation is an homage to history taken further with a hint of vermouth through Hernö Dalarosso Dry Gin and Mancino Secco, balanced with the saltiness and nuttiness from browned butter.
40 ml Hernö Dalarosso Dry Gin
5 ml Mancino Secco
25 ml lemon juice
15 ml Raspberry Cordial
1 bsp browned butter, slightly salted
20 ml egg white
Shake twice. Strain into a chilled cocktail glass. Garnish with three dashes of browned butter and a lemon zest.
